Description

Chive Potato Latkes are a modern twist on the traditional latkes. Perfectly crispy on the outside and tender on the inside, these latkes are infused with the fresh flavor of chives. They are an ideal dish for festive occasions or as a comforting snack. Serve them with sour cream or applesauce to enhance the flavors and make them a highlight of your table.


Ingredients

  • 3 large potatoes, grated
  • 1 small onion, finely chopped
  • 2 large eggs, beaten
  • 2 tablespoons flour
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil for frying

Instructions

  1. Grate the potatoes using a box grater or food processor and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
  2. In a large mixing bowl, combine the grated potatoes, chopped onion, eggs, flour, chives, salt, and pepper. Mix until well combined.
  3. Heat vegetable oil in a large frying pan over medium heat.
  4. Scoop about 2 tablespoons of the potato mixture and form it into a small patty. Carefully place the patty into the hot oil.
  5. Fry for 3–4 minutes on each side until golden brown and crispy. Remove from the pan and drain on a paper towel-lined plate.
  6. Repeat with the remaining mixture.
  7. Serve warm with sour cream or applesauce.
