Ingredients

  • 8 oz mushrooms, sliced
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 4-5 minutes until tender but still crisp. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 30 seconds until fragrant.
  3. Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until golden brown and softened.
  4. Add the cooked green beans to the skillet with the mushrooms. Toss to combine and season with salt, pepper, and a squeeze of fresh lemon juice.
  5. Cook for an additional 2-3 minutes until the green beans are heated through.
